What is Crystalization?
In properly stored conditions, honey can last for years, although many people don’t realize it. However, after several months of being left in a pantry, honey can sometimes undergo a process called crystallization. During crystallization, the natural sugar particles of the honey come together, and the silky liquid texture turns into a solid crystallized state.
The time it takes for honey to crystalize may vary. The rate at which honey crystalizes is based on several factors, including floral notes, moisture content, and storage conditions. Properly stored honey should remain in a liquid state for 90 days, but do not throw it away if the honey does begin to crystalize. Crystalization is a natural process and not an indicator of the honey going bad.
Crystalized honey is perfectly safe to eat. In fact, some prefer it to the regular honey consistency. However, for those who would instead enjoy honey in its normal state, Anna’s Honey has a tried-and-true method.
Decrystallize Honey by Warming Water
To bring back honey to its regular state, fill a bowl with warm water and place any jar or bottle of honey inside. The heat from the water will warm the honey, allowing the sugar to move apart and return to its liquid state. Anna’s Honey recommends eating honey within a year after its purchase, meaning honey can be decrystallized and enjoyed for months on end.
To maintain the nutrition and taste of honey, Anna’s strongly suggests you do not decrystallize honey in a microwave. We go through careful processes when making our honey to never heat it to high temperatures. Heating honey in a microwave will damage the quality of the honey. The best way to decrystallize honey is to warm it slowly to not affect its nutrients or flavor profile.
