Grilled Honey Bourbon Chicken Blitz
Yields: Approximately 8 servings
- 3-4 lbs. chicken wings
- 6 slices bacon uncooked
- 1-1/2 cups bourbon whiskey
- 1 cup honey
- 1/2 cup water
- 2 cups tomato sauce
- 2 cups onion chopped
- 1 Tablespoon minced chipotle pepper in adobo sauce, plus 1 teaspoon
- 2 Teaspoons Salt
- 1 Teaspoon ground pepper
- 1 Teaspoon White pepper
- 2 Teaspoons garlic powder
- 4 Tablespoons cold butter
- 4 cloves garlic chopped
- Juice and peel from 1 lemon
Cook the bacon until it is crisp, 5 minutes. Remove the bacon from the pan, but don't dump the bacon fat.
Using the same pan you cooked the bacon in add the chipotle pepper in adobo sauce, garlic, salt, chopped onion, peppers and garlic powder. Return the pan to low heat and gently stir all the ingredients until the onions lightly brown up, 5 minutes.
Pour in the bourbon, wait 2 minutes more.
Add the honey, water, lemon juice, tomato sauce and lemon peel. Stir. After 10 minutes remove the lemon peel. Add the cold butter. Stir for 15 minutes, then remove the mixture from heat and allow it to cool.
Put the mixture into a food processor and blend until it has a smooth consistency. Place the sauce is a bowl.
Cook the chicken wings for 30 minutes over medium heat. Flip them every 10 minutes.
Generously mop the sauce onto the wings and continue to cook for 5 minutes. Repeat for an additional 5 minutes. The more sauce, the merrier.
